Today I’m going to be sharing a little secret (and recipe) for keeping your sanity and pocket book in check for holiday gatherings, birthday parties, or heck even just a crazy busy day. What’s the secret? Breakfast.

Pancake-puffers-recipe-heroBreakfast you ask? Yes! Who doesn’t love breakfast food!?! It is always delicious, easy to throw together and most often affordable. We have started having the boys birthday parties in the morning. I can easily get all the breakfast food put together, feed a crowd and then the families can be on their way with the rest of the afternoon available. Besides it is unique and different and everyone is usually in a good mood!

Breakfast or brunch is also great for the upcoming holidays. I know we can’t be the only family with multiple families to juggle and see. We’ve started having breakfast on Christmas Eve morning with one set of parents. This allows us quality time with all the family and nobody’s feelings get hurt.

One of my very favorite go to recipes for these “breakfast parties” are what we like to call Pancake Puffers. Bite sized pancakes you can pile high on your plate, dip in syrup and pop in your mouth! You can customize these in many different ways for any occasion and best of all you don’t have to stand over the griddle while everyone else is eating!

Here is some Pancake Puffers at Big Brother’s third birthday party and at Little Brother’s fourth birthday party. Tip: Make LOTS as they go fast!


Pancake-puffers-recipe-fMaking Pancake Puffers is so simple. I like to use Aunt Jemima Buttermilk Complete Pancake Mix (the kind you just need to add water!) and have plenty of Aunt Jemima Original Syrup on hand for dipping. Toppings can include but are not limited to: blueberries, raspberries, chocolate chips, strawberry jam, birthday sprinkles, bananas and peanut butter. You get the idea! Come up with your own favorite flavors. All of these ingredients can be found at your local Walmart making them easily accessible to everyone.

Aunt-Jemima-pancakesAunt-Jemima-pancakes-aFor the recipe I’m sharing I used frozen blueberries and raspberries, mini chocolate chips and strawberry jam. My boys usually dictate which flavors I should make depending on the occasion or mood.

Pancake-puffers-recipePancake Puffers Recipe (yeild: approx. 50 puffers)


  • 2 cups Aunt Jemima Buttermilk Complete Mix
  • 1 cup water
  • 1/4 cup plain greek yogurt
  • Toppings: blueberries, raspberries, mini chocolate chips and strawberry jam. (use whatever toppings you love!)
  • Aunt Jemima Original Syrup


  • Preheat oven to 350 degrees.
  • Grease a mini muffin pan with butter or non-stick cooking spray.
  • Add Aunt Jemima Buttermilk Mix, water and greek yogurt to a large mixing bowl. Stir together until you have a batter a little bit thicker than normal pancake batter.
  • Add about one tablespoon of batter to each mini muffin hole.
  • Add toppings of your choice. Press down in the batter just a bit.
  • Bake for approximately 7 minutes.
  • Let cool and remove.

It is often requested and my go to meal on busy nights when you need dinner prepared in a flash. Here is our family being silly around the table with our Pancake Puffers. Again take note that these will go fast so make a bunch!
